Many may consider Pork Adobo as a Philippine national dish. Pork Adobo obviously has pork and cooked with soy sauce, vinegar and garlic.
Adobo can be made with other meat such as chicken, seafoods, goat meat, beef, veal and other meats.
Some regions of the Philippines will do it slightly differently.
